Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- ¾ cup orange juice
- 2 tablespoons melted butter
- 1 large egg
- 1½ cups fresh cranberries, coarsely chopped
- 1 cup walnuts, chopped
- 1 tablespoon orange zest
Instructions
- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine orange juice, melted butter, and egg. Mix well.
- Add wet ingredients to dry ingredients, stirring just until moistened. Fold in cranberries, walnuts, and orange zest.
- Pour batter into the prepared pan. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in pan for 10 minutes before removing to a wire rack.
Storage
Store wrapped in foil at room temperature for up to 3 days, or freeze for up to 3 months.
