Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted coconut oil
- 1/2 cup maple syrup
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat and Prepare
- Preheat oven to 350°F (175°C)
- Line a 9x5 inch loaf pan with parchment paper
- Mix Wet Ingredients
- In a large bowl, mash bananas until smooth
- Add melted coconut oil, maple syrup, and vanilla
- Whisk until well combined
- Combine Dry Ingredients
- In a separate bowl, mix flour, baking soda, salt, and cinnamon
- Gradually add dry ingredients to the wet mixture
- Stir until just combined (do not overmix)
- Fold in walnuts if using
- Bake
- Pour batter into prepared loaf pan
- Bake for 55-60 minutes
- Test with a toothpick - it should come out clean when inserted
- Cool and Serve
- Let bread cool in pan for 10 minutes
- Remove from pan and cool completely on a wire rack
- Slice and enjoy!
Notes
- Use very ripe bananas for maximum sweetness
- Store wrapped at room temperature for 3-4 days
- Can be frozen for up to 3 months
