Thai Peanut Noodles

Ingredients: 8 oz rice noodles 1/3 cup natural peanut butter 2 tbsp soy sauce 1 tbsp rice vinegar 1 tbsp sesame oil 2 cloves garlic, minced 1 tbsp ginger, grated 1-2 tbsp sriracha 2 tbsp honey 1/4 cup warm water 1 cup shredded carrots 2 green onions, sliced 1/4 cup chopped peanuts Fresh cilantro for garnish

Instructions:

  1. Cook rice noodles according to package directions. Drain and rinse with cold water.
  2. Whisk together peanut butter, soy sauce, vinegar, sesame oil, garlic, ginger, sriracha, honey, and water until smooth.
