Cranberry Walnut Bread


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • ¾ cup orange juice
  • 2 tablespoons melted butter
  • 1 large egg
  • 1½ cups fresh cranberries, coarsely chopped
  • 1 cup walnuts, chopped
  • 1 tablespoon orange zest

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine orange juice, melted butter, and egg. Mix well.
  4. Add wet ingredients to dry ingredients, stirring just until moistened. Fold in cranberries, walnuts, and orange zest.
  5. Pour batter into the prepared pan. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool in pan for 10 minutes before removing to a wire rack.

Storage

Store wrapped in foil at room temperature for up to 3 days, or freeze for up to 3 months.
