Ingredients:
- 2 medium cucumbers, sliced
- 4 medium tomatoes, cut into wedges
- 1/2 red onion, thinly sliced
- 1/4 cup fresh herbs (dill, parsley, or basil)
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions:
- Slice cucumbers into 1/4-inch rounds. Cut tomatoes into wedges and thinly slice onion.
- Combine vegetables in a large bowl. Add chopped fresh herbs.
- Whisk olive oil and vinegar in a small bowl. Pour over vegetables and toss gently.
- Season with salt and pepper. Let stand 10 minutes before serving.
Storage: Best served fresh but can be refrigerated for up to 24 hours.
