Cucumber and Tomato Salad

Ingredients:

  • 2 medium cucumbers, sliced
  • 4 medium tomatoes, cut into wedges
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh herbs (dill, parsley, or basil)
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions:

  1. Slice cucumbers into 1/4-inch rounds. Cut tomatoes into wedges and thinly slice onion.
  2. Combine vegetables in a large bowl. Add chopped fresh herbs.
  3. Whisk olive oil and vinegar in a small bowl. Pour over vegetables and toss gently.
  4. Season with salt and pepper. Let stand 10 minutes before serving.

Storage: Best served fresh but can be refrigerated for up to 24 hours.
