Kale Slaw


Ingredients:

  • 1 large bunch curly kale, stems removed, finely chopped
  • 2 carrots, julienned
  • 1 red cabbage, thinly sliced
  • 1/2 cup mayo
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions:

  1. Massage chopped kale with a pinch of salt for 2-3 minutes until softened.
  2. Mix mayo, vinegar, and honey in a large bowl. Season with salt and pepper.
  3. Add kale, carrots, and cabbage to the dressing. Toss well to combine.
