Maple Brussels Sprouts with Apples and Pecans

Prep Time: 15 minutes Cook Time: 25 minutes Servings: 6

Ingredients:

  • 2 lbs Brussels sprouts, halved
  • 2 medium Honeycrisp apples, diced
  • 1 cup pecans, roughly chopped
  • 3 tablespoons olive oil
  • 1/4 cup pure maple syrup
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F. Trim and halve Brussels sprouts, dice apples, and chop pecans.
  2. Toss Brussels sprouts with 2 tablespoons olive oil, salt, and pepper on a large baking sheet. Roast for 15 minutes until edges begin browning.
  3. Add diced apples to the pan. Drizzle with remaining oil and maple syrup. Return to oven for 7-8 minutes.
  4. Sprinkle pecans over the pan. Roast for 3-5 minutes more until the nuts are toasted and the sprouts are caramelized.
  5. Remove from oven, drizzle with balsamic vinegar, and toss to combine. Serve hot.

Recipe Tips: The key to perfectly caramelized sprouts is not overcrowding the pan. Use two baking sheets if needed to give vegetables enough space to roast rather than steam.
