Ingredients
- 3 cups all-purpose flour
- 1½ cups shredded sharp cheddar cheese
- 1 tsp salt
- ½ tsp active dry yeast
- 1½ cups warm water
- ¼ cup chopped chives (optional)
- Coarse sea salt for topping
Method
Preparation
- Mix dry ingredients in a large bowl. Combine flour, salt, yeast, and chives.
- Add cheese and water. Stir until a shaggy dough forms. The mixture will look messy and wet.
Proofing
- Cover the bowl with plastic wrap. Let sit at room temperature for 12-18 hours.
- After proofing, the dough will be bubbly and loose.
Baking
- Preheat oven to 450°F. Place a heavy Dutch oven with a lid inside to heat.
- Carefully transfer the dough to a hot Dutch oven. Sprinkle with coarse sea salt.
- Bake covered for 30 minutes. Remove the lid, and bake for
an additional 15-20 minutes until golden brown.
Serving
Let bread cool for 1 hour before slicing. Serves 6-8.
