Instructions
Preparation
- In a large mixing bowl, combine rye flour, bread flour, yeast, salt, caraway seeds, and anise seeds.
- In a separate bowl, whisk together molasses, brown sugar, orange zest, warm water, and vegetable oil.
Mixing and Kneading
- Create a well in the center of the dry ingredients and pour in the wet mixture.
- Mix until a shaggy dough forms, then turn out onto a floured surface.
- Knead for 10-12 minutes until the dough becomes smooth and elastic. The dough will be slightly sticky due to the rye flour.
First Rise
- Place the dough in a lightly oiled bowl, and cover with a kitchen towel.
- Let rise in a warm place for 1-1.5 hours, or until the dough has doubled in size.
Shaping and Second Rise
- Punch down the dough and shape it into a loaf.
- Place in a greased loaf pan, cover, and let rise for another 45-60 minutes.
Baking
- Preheat oven to 375°F (190°C).
- Slash the top of the loaf with a sharp knife to allow steam to escape.
- Bake for 35-40 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
- Remove from pan and cool on a wire rack for at least 1 hour before slicing.
